I don't really have a huge need for a bathing suit these days, however the suit I've worn for the last few years doesn't fit anymore and B will be starting swim lessons again next month(I get in the pool with him). I have been on the search for a modest, but still cute bathing suit without spending a buttload. 
Kind of difficult.

Sidenote:
I know the go-to shop for teenage girls is Forever 21, so it's pretty sad when this is the closet thing they have to a one-piece and things like this are sold out. 
If I ever have girls,  they will know that modest is hottest!

I actually got the last one and love it so much! I ordered it from here because it was so much cheaper than Modcloth had it for. It's the same cute suit (if you can excuse the cheesy website and bad product photos!) if you decide to order it, get the next size up and it will be perfect!

Friday night  date night!
We met up with the Hartmann's at the Belmont foodcart pod.

Chris got a pulled pork sandwich and we shared a 
Fizzy Lifting Drink from the Sugar Cube.

I hadn't had a burger in so long so I decided on a cheeseburger and we split parmesean fries from Lardo.
Appaently, if a burger is called a 'double burger' that typically means there are two patties.
Who knew?!

We couldn't leave without trying the ice cream and made-to-order waffle cones from Fifty Licks.

It was still pretty warm out after dinner, so we went back to Craig and Lauren's and hung out around the firepit for hours. 
It was sprinkling off and on but we didn't even notice!

Saturday morning we went to my brother's to help get his house ready to put up for sale.
Bennett had a lot of fun playing while we were there.
He loves his uncle Graham (or Aam as he calls him).

Saturday night we went to church.
On the way back, we passed a horse drawn carriage.
You don't see those on the road everyday!

Bennett let us sleep in on Sunday until 9:00!
Chris made us homemade waffles and we topped them with strawberries and whipped cream,
my favorite topping combo from growing up.

Needless to say, I ran this morning!
Today is my grocery shopping day, so it pretty much looks like this.
Minus the running.
 I ran yesterday so I could sleep later today.

It's been so beautiful in Portland the last few days and it makes me wish I was camping.

So in the spirit of camping, I will leave you with some funny and awesome pictures

Our weekend was filled with a bunch of randomness.

Friday night we went to our friend's house for dinner and had amazing mediterranean lamb burgers, while Bennett got to play with their (almost) 6 month old son Truman.
So cute.

Saturday we took my mom out for breakfast.
We went to one of our favorite breakfast places by our old apartment.
I got banana pancakes with a side a fruit and a vanilla latte.
Chris got the breakfast burrito and shared some of his breakfast potatoes with me.
I LOVE their breakfast potatoes.
Actually, I love any breakfast potatoes.
Actually, I love any potato.

Then we dropped Chris off at work so he could get a head start on the work week.
Bennett and I hung out until church.

Sunday Chris' parents came over for lunch.
I made my famous enchiladas.
For dessert that night, I made this vegan avocado cacao mousse. 
It only takes avocados, cocoa powder and honey.
I know it sounds weird, but it's good.
You're eating a vegetable for dessert...that means you can have seconds right?

Yesterday we put an offer on a house.
No big deal.
We pretty much are grown-ups now.
I made these for dinner.
So good.

This morning, I met Lauren at Anthropologie for their big Spring tag sale. 
I got a dress I had been eyeing.
Bennett got a cute puppet.
Lauren got a cute mug.

I wanted to share this really funny post I read about the world without Blogger.
(did you know what to do with yourself when it was down for 24hrs?!)
Moday night I decided to make a meal out of two things I had pinned on 
Pinterest (click the link to see more yummy dinner ideas). 
I was really excited to make these, and they both turned out to be so good!

stuffed zucchini
(adapted from kayotic kitchen)



You need:
3 zucchinis
1.5 T sour cream
pinch of sea salt
a few good shakes of pepper
1/4 tsp yellow curry powder
1/2 tomato (I left this out since I didn't have any)
1 tsp thyme
1 sweet onion
4 strips of quality bacon (I just asked for them at the deli counter)
shredded parmasean cheese
1 T olive oil

Preheat oven to 400 degrees.

Finely chop the onion and grill it in the olive oil until it starts to turn brown. 
Remove from heat and stir in curry powder.
Fry up bacon and place on paper towel while it cools. 
Wash the zuchhinis and cut them in half length wise. Scoop out the insides with a spoon, leaving just enough flesh so they don't become weakened (around 1/2 in.).
Finely chop up both the zucchini flesh and the bacon. 

In a medium bowl stir together the onion, bacon, chopped zucchini, sour cream, thyme, salt, pepper and tomato.

Add the mix to the shells and sprinkle with parmasean.

Place in the oven on a non-stick foil lined cookie sheeet (or in a greased baking dish) for about 30 minutes.

These babies cool down quickly so don't let them sit for too long after you take them out!



I was trying to figure out what I could make as a side and I had been trying to find a reason to make these smashed salt and vinegar potatoes for a while...not sure if they are complimentary to a stuffed zucchini but what really is?! My tastebuds enjoyed this meal nonetheless!


smashed salt and vinegar roasted potatoes





you need:
10 dutch yellow baby potatoes (they usually come in a little bag) 
olive oil/olive oil spray
sea salt and pepper (to taste)
malt vinegar

Preheat oven to 425 degrees.

Place the potatoes into salted boiling water and let boil for 15 mins or until fork tender.

Line a baking sheet with non-stick foil (or spray with oil).

Drain and once cooled a little place the potatoes on the foil and gently smach each one with the bottom of a cup. They might fall apart a little, but that's okay. 

Spray with oil and sprinkle with salt, pepper, and vinegar. 

Pop them in the oven for 10-15 minutes then flip the potatoes and spray the other side with oil and sprinkle with salt, pepper and vinegar. 

Place back in oven for 10-15 more minutes.

Enjoy...I dare you not to eat them all yourself!

This last weekend was pretty darn full and exciting!

Thursday we all got haircuts by our amazing friend Lindsey.
This was Bennett's first haircut in the salon, he stayed pretty still which was a good thing!

Friday night was date night.
With no babysitter, we had to be creative. 
Chris built an awesome fort and grabbed takeout from our favorite Thai place.
He let me pick a movie (Life as We Know It)(not so bad!) and we watched in in the fort.
How awesome is my husband?! 
Also, this was like the first movie ever than I've stayed awake for. 
Amazing I tell ya!

Saturday night we went to our friend's wedding.
It's always fun to see your friends get married!
It's also funny seeing all of your other friends all dressed up.

And this is what I wore:

(I realize it looks like I have no arms. They are there, just hanging out in my pockets.)

Sunday we went up to my sister's house for a mother's day bbq.
We didn't get too many pics.
The sun was so bright, I could barely open my eyes:

I got some lovely flowers and a sweet handmade card.
(does anyone else bawl when they read cards? No? Just me?)

And yesterday we began our house hunt!!!
We saw 8 houses in one day, but technically only 6 because just the mere sight of a few of the houses/neighborhoods made us keep on driving!

We saw some awesome things:

(this bathroom wasn't horrible but it would be difficult to work with the pink tile and the world's smallest sink. I don't think we could bring ourselves to tear something original out though.)

We found one that we can't stop thinking about but our least here isn't up until the end of August.
Know anyone who wants to move downtown for a couple of months?! 
It was a long day and we learned that house hunting is exhausting even though you are mostly sitting in a car.
We also learned that you can't just judge a house by the pictures on the listing, they are VERY deceiving!
Yesterday we went to the zoo with Lauren
It turned out to be a pretty nice, low key day. 
We have a zoo pass, so we will totally be going more on the weekdays vs. the weekends now. 
I won't miss that craziness!

Going to the zoo with a toddler is funny. He found the flashing light on the smoke detector at the top of the barn and kept watching it. He also was way more interested in all the kids around him than the animals themselves.

He really enjoyed kicking this little red gate because it made a big sound with his boot.
