Moday night I decided to make a meal out of two things I had pinned on 
Pinterest (click the link to see more yummy dinner ideas). 
I was really excited to make these, and they both turned out to be so good!

stuffed zucchini
(adapted from kayotic kitchen)



You need:
3 zucchinis
1.5 T sour cream
pinch of sea salt
a few good shakes of pepper
1/4 tsp yellow curry powder
1/2 tomato (I left this out since I didn't have any)
1 tsp thyme
1 sweet onion
4 strips of quality bacon (I just asked for them at the deli counter)
shredded parmasean cheese
1 T olive oil

Preheat oven to 400 degrees.

Finely chop the onion and grill it in the olive oil until it starts to turn brown. 
Remove from heat and stir in curry powder.
Fry up bacon and place on paper towel while it cools. 
Wash the zuchhinis and cut them in half length wise. Scoop out the insides with a spoon, leaving just enough flesh so they don't become weakened (around 1/2 in.).
Finely chop up both the zucchini flesh and the bacon. 

In a medium bowl stir together the onion, bacon, chopped zucchini, sour cream, thyme, salt, pepper and tomato.

Add the mix to the shells and sprinkle with parmasean.

Place in the oven on a non-stick foil lined cookie sheeet (or in a greased baking dish) for about 30 minutes.

These babies cool down quickly so don't let them sit for too long after you take them out!



I was trying to figure out what I could make as a side and I had been trying to find a reason to make these smashed salt and vinegar potatoes for a while...not sure if they are complimentary to a stuffed zucchini but what really is?! My tastebuds enjoyed this meal nonetheless!


smashed salt and vinegar roasted potatoes





you need:
10 dutch yellow baby potatoes (they usually come in a little bag) 
olive oil/olive oil spray
sea salt and pepper (to taste)
malt vinegar

Preheat oven to 425 degrees.

Place the potatoes into salted boiling water and let boil for 15 mins or until fork tender.

Line a baking sheet with non-stick foil (or spray with oil).

Drain and once cooled a little place the potatoes on the foil and gently smach each one with the bottom of a cup. They might fall apart a little, but that's okay. 

Spray with oil and sprinkle with salt, pepper, and vinegar. 

Pop them in the oven for 10-15 minutes then flip the potatoes and spray the other side with oil and sprinkle with salt, pepper and vinegar. 

Place back in oven for 10-15 more minutes.

Enjoy...I dare you not to eat them all yourself!

    That sounds really good and I could totally make those potatoes. Ok, I bet I could make the zucchini just fine too, but there are a lot of steps and I don't like to be in the kitchen very long.
