amazing veggie sloppy joes.

I've had this recipe bookmarked since September and there it sat for a month or two before I looked at it again. I'm so glad I did. I knew it looked so good in the picture on the original post but I wasn't really sure about the eggplant or the tempeh...both of which kind of scared me a little. Only weird people eat stuff like tempeh right?!

We have never been big meat eaters, and though Chris eats enough veggies for the both of us, I really only eat veggies if they are dipped in something yummy like hummus to give them a little flavor. Needless to say, I'm always looking for good recipes that incorporate lots of veggies.

I figured that since everyone is making new years resoultions, and judging by how many people have been at the gym lately, people are trying to get healthy. These sloppy joes are so easy and turned out so much better than I thought they would! Look at all those veggies! I dare you to try it just once. I'll pay you $100 if you make it and don't like it (not really) but seriously MAKE THIS!
What's that? You are certain your husband wouldn't touch tempeh with a ten foot pole? Tell him it's ground chicken...he'll never know. Really he won't.

Ingredients:

1 tablespoon of olive oil
1 large onion, diced
2 bell peppers, diced (red, green, orange or yellow)
1 zucchini, diced
1 medium eggplant, peeled and diced
3 garlic cloves, minced
2 tablespoons of chili powder
2 8-ounce packages of tempeh (it's super cheap at Trader Joes)
1 lb of tomatoes, blanched ( I just get a can of stewed tomatoes. If you are a tomato fan get 2)
1/4 cup of ketchup
1/4 cup of Dijon mustard
1/4 cup of fresh parsley and fresh cilantro leaves

Kaiser rolls

(we like to toast our buns. and top it with a slice of pepperjack and some avocado slices as if there weren't enough veggies)

serves: a buttload. like 6 or 7 heaping sloppy joes


heat olive oil and saute onions for about 7 mins.

add zuchinni, peppers, eggplant and garlic.
cook over medium heat for 2-3 mins.
get over how weird tempeh looks and crumble it into the pan.
add tomatoes, ketchup, dijon, chili powder and 1cup water.
mix well and simmer for about ten minutes.
remove from heat and add cilantro and parsley.
add a little s&p and enjoy!
top with pepperjack and avocado slices if you'd like. (you won't regret it)
It's seriously impossible to mess up.
Chop your veggies earlier in the day to make it an even easier meal!

Oh and you'll have a lot of leftovers which are even more tasty in my opinion!
Bennett loves eating this with a spoon, and hopefully he still will when he realizes it's all veggies, which are definitely not his favorite!

    Don't get grossed out guys...

    Tempeh(/ˈtɛm.peɪ/), or tempe (Indonesian), is a traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form, similar to a very firm vegetarian burger patty.     i'm totally making this this week! i've been needing to find some new recipes, so this will be just the thing. although, i'm pretty sure craig would know if i used tempeh, so i think i might just use ground chicken, but i'll still be getting in all those good-for-me veggies that i rarely eat :). thanks friend!
